Gluten Free Peanut Butter Pancakes
As Requested
• 1/2 cup Peanut butter (or any nut butter) • 1/2 cup applesauce (original recipe didn’t include this, experiment at risk) • 2 eggs • 1/2 tsp baking soda • 1/2 tsp vanilla
—> mix everything together in a bowl until well mixed
—> pour using a 1/4 cup holder into a heated skillet on medium heat OR place on a baking sheet lined with parchment paper (to make them all at once)
—> In skillet, cook for 4-5 minutes each side OR bake for 10-12 minutes until they’re light and fluffy and hold together
—> serve topped with fruit, chocolate or caramel sauce, etc
—> ENJOY! x

Getting healthier takes time and staying motivated can be a big hurdle so I hope some of these projects help! They’re designed to inspire you to change up your routine, remember how far you’ve come and give you that extra push you need on the hardest days. This should never feel like a punishment, getting fit should be something that makes you happy so fill your days with foods you love, fitness you enjoy and rewards that make you smile!
