Gluten Free Peanut Butter Pancakes
• 1/2 cup Peanut butter (or any nut butter)
• 1/2 cup applesauce (original recipe didn’t include this, experiment at risk)
• 2 eggs
• 1/2 tsp baking soda
• 1/2 tsp vanilla
—> mix everything together in a bowl until well mixed
—> pour using a 1/4 cup holder into a heated skillet on medium heat OR place on a baking sheet lined with parchment paper (to make them all at once)
—> In skillet, cook for 4-5 minutes each side OR bake for 10-12 minutes until they’re light and fluffy and hold together
—> serve topped with fruit, chocolate or caramel sauce, etc
—> ENJOY! x
